The Best Healthy Breakfast Recipes

Like I said in my last post, I really love to cook (especially when it comes to breakfast) and now that I have WAY more time in the mornings I’ve been able to cook all my favorite breakfasts without having to worry about lack of time (and the best is that all of them are HEALTHY)!

Thus, I wanted to share some of my favorite recipes with you so that you too can enjoy them!

3-Ingredients Pancakes

This is probably the easiest breakfast recipe ever! All you need are three ingredients that you definitely have at home: eggs, bananas and some kind of seed or nut.

They’re filled with vitamins, fiber, protein and all that “good for you” stuff, but they taste like REAL pancakes. How amazing is that?

Ingredients: (for 10 to 12 pancakes)

-1 banana

-2 eggs

-1 1/2 tablespoons of chia seeds (or some kind of nuts – like pecans, hazelnuts, etc)

Instructions:

1.Mix all of the ingredients in a food processor until you get something similar to a pancake batter.

2.In a frying pan previously spread with olive oil or coconut oil, drop small portions of the batter and cook until gold (1 to 2 minutes each side, though it depends on how hot your pan is).

3.Finally, is time for the toppings! I usually top mine with berries and peanut butter, but you can also add chocolate chips or, instead of the peanut butter, you can use maple syrup or agave.

Strawberry&Coconut Smoothie Bowl

I don’t know about you, but I LOVE smoothie bowls! They’re just the perfect mix between something delicious you can drink and all the amazing toppings there are out there.

And this recipe is actually super easy! All you need to do is throw all the ingredients to a food processor and that’s it!

Ingredients:(for 1 portion)

-1 frozen banana

-6/7 small to medium strawberries

-100mL of non-dairy milk (I either use almond or coconut milk – take into account that I use this quantity as it’s the one that gives my smoothie thicker consistency; add more milk if you wish for a more liquid consistency)

Instructions:

1.Mix all the ingredients in a food processor until you get the desired consistency.

2.Once you have you smoothie in a bowl, it’s time for the toppings: I usually add more strawberries, shredded coconut and some granola!

Choco&PB Smoothie Bowl

This one is by far my absolute favorite: I love everything that has CHOCOLATE in it and this one is no exception – and the peanut butter is just a bonus!

Just like the previous recipe, all you need to do is put all the ingredients in a food processor and that’s all (and this one even includes an extra ingredient that makes this smoothie bowl even more CREAMY)!

Ingredients:(for 1 portion)

-1 frozen banana

-1/2 avocado (this is the special ingredient, could you guess it?!)

-1 full tea spoon of cocoa powder

-100mL of non-dairy milk

Instructions:

1.Mix all the ingredients in a food processor until you get the desired consistency.

2.Finally, the toppings: I like to add some chocolate chips, peanut butter and granola!

Overnight Oats

This is actually what I do everyday when I’m not in quarantine (aka when I have a stricter schedule to follow in the morning) because you can do it the night before and you can make a bigger portion because it lasts up to 3/4 days in the fridge!

Ingredients:(for 1 portion)

-1 mashed banana

-3 table spoons of rolled oats

-1 table spoon of chia seeds

-1 table spoon of peanut butter

-1 table spoon of açaí purée (optional)

-1 tea spoon of cinnamon

-1 tea spoon of cocoa powder (optional)

-100 mL of non-dairy milk

Instructions: (for 1 serving)

1. Mix all the ingredients in a bowl. Cover it with cling film and rest it there until the next day.

2.When you’re getting ready to eat it, add some toppings, like some berries a maybe even an extra peanut butter spoon.

You can also eat this hot! All you need is to mix all the ingredients in a pan (except for the chia seeds) and bring it to boil. Once you have the desired consistency, serve it and add the toppings. This one is perfect for colder days or for when you’re craving some comfort food!
